I bought a popsicle mold, some fresh fruits and veggies and got busy this weekend. These are from my first batch, avocado and cantaloupe popsicles. They are both so refreshing, not to mention healthy! Next, I think I’ll try some with cucumbers or lavender and honey.
CANTALOUPE POPSICLE (12 pops)
1 small cantaloupe
1/2 cup water
1/4 cup sugar (cut in half for healthier results)
1 tablespoon finely slivered fresh mint leaves
1/3 cup lemon juice
2 tablespoon lemon zest
AVOCADO POPSICLE (12 pops)
3 large avocado
3/4 cup coconut milk
1/2 cup sugar (cut in half for healthier results)
2 tablespoon of lime zest
pinch of salt
For both popsicle recipes, blend all of the ingredients until creamy. Fill popsicle molds and place in the freezer for at least 5 hours. And enjoy!
